Hard Boiled Eggs

  • Eggs
  • 1 teaspoon salt
  • Water

1.  Gently place eggs in a single layer in a medium or large pot (depending on how many you're boiling).  Cover with at least an inch or two of cold water.  Add salt.

2.  Bring to boil.  The second the water boils, turn off heat and cover pot with lid.  Allow eggs to sit for 10-12 minutes, not a minute longer!

3.  Using a slotted spoon, gently transfer eggs to strainer.  Run under WARM water for 2 minutes, then under COLD water for another 2 minutes. 

4.  Eggs should be cold enough to handle by now.  Peel shells and serve.

Carol's Tuna Fish Salad

Serves 6 boyfriends
  • 2 (7 ounce) cans Bumble Bee Solid White Albacore in Water, finely mashed with the back of a fork
  • 3 hard boiled eggs, finely chopped
  • 1 small spanish onion, minced
  • 6-8 tablespoons Hellman's Light Mayonaise (light blue lid)
  • pepper to taste
  • challuh, matzah, or crackers (optional)

1. Mix together tuna, eggs, onion, mayonaise, and pepper with a spoon.  Spread on challuh, matzah, or crackers. 

2.  This appetizer is great to always have in the fridge, especially on busy nights when you don't have time to make appetizer.
