Lazy Chicken

Serves 1 boyfriend in 30 minutes
I made this meal for Mitch after getting off the train from NYC.  I was exhausted, but he was starving.  Using staple ingredients, I created this simple and delicious meal.

  • 1 tablespoon olive oil
  • 1 large shallot, small dice
  • 1 clove of garlic, chopped
  • 1 (16 ounce) can seasoned chopped tomatoes (mine had basil, oregano, and garlic)
  • 2 tablespoons water
  • 1 boneless/skinless chicken breast seasoned with salt and pepper
  • chopped parsley (optional) for garnish
1.  Heat olive oil in a large skillet over medium heat.  Add shallot and garlic and saute for about 5 minutes, until slightly browned.  Add tomatoes and water.  Simmer for 6 minutes, stirring occasionally.  Add chicken and cover.  Cook 5 minutes per side, until it's completely cooked through.  

2.  Serve your boyfriend:  Pour tomatoes onto plate.  Then place chicken on top.  Garnish with parsley.
