Nut Crusted Chicken

Serves 2 hungry boyfriends in 20 minutes

  • 1/4 cup mixed unsalted nuts 
  • 1 tablespoon grated parmesan cheese
  • 1 slice of bread, any kind, torn in pieces
  • salt/pepper
  • 2 boneless/skinless chicken breast
  • 1 egg white, beaten until slightly foamy
  • 2 tablespoons grape seed oil
1.  Pre-heat oven to 400 degrees F.  In a food processor, grind nuts, parmesan, bread, until finely chopped.  Season with salt and pepper.  Pour into shallow dish, set aside.

2.  Season chicken with salt/pepper.  Dip chicken into egg white, shaking off excess.  Then dip into nut mixture, making sure both sides are completely coated.  Heat grape seed oil in a non-stick oven proof skillet over medium-high heat.  Sear one side of chicken for 2 minutes, until lightly browned.  Carefully flip chicken and transfer skillet to oven.  Cook for 15 minutes.

3.  Serve your boyfriend:  This meal goes great with a mixed green salad with balsamic vinaigrette.
