Pizza Salad

Serves 2 hungry boyfriends in 30 minutes


  • 1/3 cup olive oil
  • juice from 2 lemons
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • a pinch of red pepper flakes

  • pre-made pizza dough (find at Trader Joes or Whole Foods, or buy frozen pizza dough and defrost)
  • All purpose flour
  • 4 ounces mozzarella cheese, crumbled 
  • 1 boneless/skinless chicken breast
  • 6 ounces arugula mix
  • 1 bell pepper, seeded and chopped
1. Preheat oven to 425 degrees F.  Make the dressing:  In a large bowl whisk together all the vinaigrette ingredients.  Set aside.  Flour your work surface and rolling pin.  Roll out pizza dough to 12 inches in diameter.  Lightly brush pizza dough with olive oil.  Sprinkle on crumbled cheese leaving a 1 inch border.  Transfer to a lightly oiled baking sheet and bake for 10 minutes, until cheese and dough turns golden brown.

2.  Meanwhile, cook the chicken.  Heat 1 tablespoon of grape seed oil in a small skillet over medium-high heat.  Season chicken on both sides with salt and pepper.  Cook 4-5 minutes per side, until golden brown and cooked through.  Slice chicken on a bias for a prettier presentation.  

3.  Whisk dressing again.  Toss in arugula and bell pepper.  Transfer salad over pizza and place chicken on top.

4.  Serve your boyfriend:  I like to serve this meal on a cutting board.  Your boyfriend will have fun slicing into his own pizza.
