Slow Roasted Tomatoes

Makes 16 tomato halves in 90 minutes
Ingredients

  • 8 roma tomatoes, cut in half lengthwise
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoons sugar
  • salt and pepper
Directions

1.  Preheat oven to 325 degrees F.  Line a baking sheet with parchment paper.  Place tomatoes on sheet, skin sides down, about 2 inches apart.  Sprinkle on oregano, olive oil, red wine vinegar, and sugar.  Season with salt and pepper.  Cook in the oven for 90 minutes, until centers collapse.
