The Boyfriend Salad

Serves 2 in 20 minutes
This hearty salad works as an entree.  I also like to serve this when Mitch is in a healthy mood.


Ingredients
  • Olive oil
  • 4 cups of 1 inch cubed ciabatta bread (any rustic loaf will do)
  • Salt and pepper
  • 3 bell peppers of different color, seeded and chopped
  • 1 cucumbers, quartered lengthwise and chopped
  • 1 large carrot, peeled, quartered, and thinly sliced
  • 1/2 red onion, quartered lengthwise and thinly sliced
  • 1 cup fresh basil, julienned
For the Dressing:
  • 1/2 cup olive oil
  • 1/3 cup champagne vinegar
  • 1 teaspoon dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Directions

1.  Prepare the croutons.  In a large skillet heat 3 tablespoons of olive oil over medium heat.  Working in batches add bread.  Flip bread cubes every 5 minutes making sure they're toasting evenly.  Season with salt.  When the skillet starts to dry, add more oil.  Repeat with remaining bread.  Set aside.

2.  In a large bowl combine bell peppers, cucumber, carrot, onion, and basil.  In a measuring cup, whisk together all dressing ingredients.  Pour dressing over salad.  Add croutons to the salad.  Toss the salad one more time and season with pepper.

Chickpea Salad

Serves 4 hungry boyfriends in 10 minutes
Ingredients

  • 4 cans (15.5-ounce) chickpeas, rinsed and drained
  • 1 tablespoon minced rosemary
  • 2 tablespoons minced parsley
  • 2 teaspoons cumin
  • 1 shallot, pealed and thinly sliced
  • 1 cup shelled edamame
  • 1/4 cup diced red pepper
  • 1 cup dried cranberries
For the Dressing:
  • 1/2 cup olive oil
  • 1/3 cup apple cider vinegar (also called cider vinegar 
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Directions

1.  In a large bowl mix together all ingredients.  Set aside.

2.  Make the dressing: In a measuring cup, combine all dressing ingredients.  Pour dressing over chickpea mixture and toss.
3.  Serve your boyfriend.  This meal is great as a side dish or an entree.  It's very healthy and very filling.

The Boyfriend Caesar

Serves 2 hungry boyfriends in 15
Use any kind of blender for this; hand or standing
Ingredients
  • 8-10 chicken tenders
  • salt and pepper
  • 2 large egg yolks
  • juice of 2 medium lemons, about 1/3 cup
  • 1.5 teaspoons anchovy paste
  • 1 garlic clove, chopped
  • 1 tablespoon dijon mustard
  • 1/2 cup olive oil
  • 2 hearts of romaine, quartered lengthwise 
  • 1/2 cup grated parmesan cheese
Directions

1.  Heat grill pan over medium-high.  Lightly brush grill with oil.  Season chicken with salt and pepper.  Once the pan is hot (about 2-3 minutes) add chicken (work in batches if you're grill is small).  Cook 4-5 minutes per side.  Transfer to a plate and set a side.

2.  Make dressing:  In blender combine yolks, lemon juice, anchovy paste, garlic, mustard, and cracked pepper.  With the blender running, slowly drizzle in olive oil.  Season with salt.

3.  Heat broiler oven.  Place hearts of romaine in a 9 by 12in baking dish.  Pour dressing over romaine and evenly sprinkle over parmesan. Cook in broiler for about 3 minutes until cheese turns golden brown.

4.  Serve your boyfriend.  This dish is so beautiful, it's really easy to plate.  Place the romaine down the center of the plate.  Add chicken around the perimeter.  Some of the dressing will pour off romaine during cooking so be sure to spoon over dressing at the bottom of the baking dish.

Panko Crusted Tilapia with a Parsley Sauce

Serves 2 hungry boyfriends in 25 minutes
Ingredients

  • 4 tilapia fillets
  • salt and pepper
  • 1 egg white, lightly beaten
  • 2 cups Panko
  • 1 tablespoon Creole seasoning
  • 2 teaspoons olive oil

For the sauce:

  • 1 cup parsley, finely chopped
  • 1 tablespoon chopped oregano
  • 1/3 cup olive oil
  • 1/4 cup white win vinegar
  • 1 pinch red pepper flakes
  • 1 teaspoon salt
Directions
1.  Preheat oven to 475 degrees F.  Line a baking sheet with aluminum foil.  Set aside.  

2.  Prepare the fish.  Slice in half lengthwise down the center of the fish then crosswise (into 4 pieces).  Season fish with salt and pepper.  

3.  Place egg in a bowl.  On a large plate, combine panko, creole seasoning, and olive oil.  Dip tilapia in egg white shaking off excess.  Place in panko mixture pressing into fish, shaking off excess.  Place on prepared baking sheet.  Repeat with the rest of the fish.  Cook for 15-20 minutes, until panko is golden brown.

4.  Meanwhile make the sauce.  In a bowl, mix together all the ingredient.

5.  Serve your boyfriend.  Pour sauce in a small attractive dish and place on the center of the plate.  Place fish sticks around the dish creating a delish meal.
